Mushroom Recipe: Spanish-Inspired Oven-Roasted Champiñones

A Healthy and Flavorful Side Dish.

Spanish tapas are the perfect inspiration for side dishes. Here is a light, flavor-filled mushroom recipe using ingredients that are accessible for wherever you may be around the world:

 

Use What You Have

With recipes and cooking, many tend to precisely follow the recipes they read. And while that is an excellent starting point, recipes for cooking savory dishes should also be used as a guide that encourages you to make the dish something of your own.

Use more salt, add hot sauce, fold in herbs. Follow your taste buds’ imagination.

This recipe for oven-roasted mushrooms encourages you to use what you have in the fridge or what is locally available where you live.
 

Oven-Roasted Champiñones, A Mushroom Recipe

Serves 2 persons
Ingredients:

  • 1/2 lb, or 220g, button mushrooms, stems popped off (you can use these in another dish)
  • 20 bits of jamón, or bits of prosciutto, or bits of bacon
  • a small fist of flat-leaf parsley, chopped
  • 2-3 Tablespoons of extra virgin olive oil
  • a pinch of kosher salt

 
Kitchen Tools:

 
1. Pre-heat the oven to 425F or 220C with the rack in the middle position.

2. Layout the mushrooms, bottom side down, on the sheet pan. Using a cooking brush, lightly brush extra virgin olive oil on the tops of the mushrooms. Turn the mushrooms around so it is now top side down.

3. In each hole of the mushroom, insert a pinch of parsley, a bit of jamón, and a sprinkle of kosher salt. Then, brush all the filled mushrooms with more extra virgin olive oil.
 
4. Roast the mushrooms for about 15-20 minutes, or until browned. Halfway through, observe the mushrooms. If they look like they are drying out, brush more olive oil on them so they won’t shrivel up.

5. Gently transfer the mushrooms to a serving plate and eat immediately, but be careful of the piping hot mushroom juice!
