Katsukura Kinka versus Berkshire Pork

Japan Food Facts: The Difference Between Katsukura Kinka versus Berkshire Pork.

Pork is considered the most popular meat in Japan with tonkatsu as the best known local pork dish. Over the centuries, decades, and recent years, Japanese pig-breeders continue to create delicious, melt-in-your-mouth pork. At Katsura, a Kyoto-based katsu restaurant, you can choose between two most premium kinds of pork: Katsukura Kinka versus Berkshire Pork.

Berkshire Pork

Berkshire pork is one of the most known premium porks in the world. The breed of pig originates from Berkshire, England. Today the pigs are bred and raised all around the world including in Japan.

Kagoshima pigs are a hybrid of Berkshire and domestic black pigs known as Kagoshima Kurobuta. The resulting taste highlights the marbling, tenderness, juiciness, and overall depth of flavor of the pork.

Kinka Pork

Kinka pork is a completely Japanese bred pig specifically from the Yamagata Prefecture. Like Kurobuta pork, Kinka pork has equally gorgeous marbling and smooth depth of flavor.

Berkshire vs. Kinka

Two cuts of sirloin from Katsukura. On of the left is Berkshire and on the right is Kinda pork. Each on their own is delicious. When compared side-by-side, the Kinka pork stands out as the winner because of its silkier, smoother, and cleaner taste.
