Most of us already know that vegetables are a vital part of our everyday health and diets. Let’s learn even more about vegetables with these 11 fascinating vegetable facts:
1. Baby carrots are not babies. They are merely irregular-shaped, full-sized carrots trimmed down by machines.
2. In 1893, the US Supreme Court classified the tomato as a vegetable (but it’s actually a fruit) for tax reasons as it was vegetables were cheaper than fruits at the time.
3. Bell peppers have different amounts of lobes, which can help determine their use. Four lobes are sweet and are best raw. Peppers with three lobes are best cooked.
4. Asparagus loses its flavor fast. It’s best to consume asparagus the day you purchase the vegetable or store it in the refrigerator with a damp towel wrapped around the bottom of the stalks to keep it moist for a couple of days.
5. Is it cilantro or coriander? Cilantro is the leaves and stems of a coriander plant. Cilantro is also the Spanish word for coriander. Coriander can refer to either the leafy herb or its seeds. So, you can call the herb both cilantro and coriander. But the seeds are only called coriander.
6. Most nutrients in a potato reside just below the skin layer.
7. California produces almost all of the broccoli sold in the United States.
8. Swiss chard is not from Switzerland. It originates near the Mediterranean and named by a Swiss botanist.
9. Catherine de’ Medici loved spinach, so many dishes containing spinach were named “Florentine” as she was native to Florence. The most famous may be Eggs Florentine.
10. Frozen peas are frozen within two and a half hours of harvest.
11. Lettuce is the only vegetable not frozen.
