One of the best foods to experience in Japan for anyone and everyone because of its affordability and accessibility is the convenience store egg sandwich. It’s the whole eating experience of tasting the creamy, delicious egg filling and the soft, fluffy bread. And when you get back home, it’s all that you think about. Not anymore! Here is an approachable and easy recipe for a Japanese Egg Sandwich:

Easiest Japanese Egg Sandwich Recipe
Makes 1 sandwich
Ingredients:
- 1 Hard-boiled egg
- 1 Tablespoon Japanese Mayonnaise
- 1 Pinch of Kosher Salt
- 1 Smaller Pinch of White Sugar
- 2 Slices of Soft, White Bread
1. In a small bowl, cut the hard-boiled egg in half so it’s easier to mix. Add 1 tablespoon of Japanese mayonnaise (for the sandwich to taste like Japan, you must use Japanese mayo because of its distinct seasoning and not any other kind), 1 pinch of salt, and a smaller pinch of sugar.
Notes: A pinch is technically defined as 1/16 of a teaspoon, but you can literally just sprinkle in a pinch using your thumb, index, and middle fingers. Also, the hard-boiled eggs can be made ahead of time for convenience. You can make at least 6 at a time and store them in your refrigerator for the week.
2. Mash the ingredients with a fork. If you like 7-Eleven’s chunkier egg filling, stop mixing once all the ingredients are incorporated together. If you’re a fan of Lawson’s smoothness, mash thoroughly until there are smaller egg white chunks and a smoother egg yolk consistency.
Note: Other recipes require you to separate the egg yolk and egg white in order to cut the egg whites into pretty squares. For aesthetics, you can do that by mixing the ingredients with the egg yolk and folding in the egg whites after. Personally, I love the creaminess of Lawson’s egg filling, so mashing the whole egg with a fork brings out that smooth consistency.
3. Place 2 slices of soft, white bread onto a cutting board. Evenly spread the egg filling mixture onto one slice of bread, and then gently lay over the second slice.
4. For the complete Japan experience, you must take the next step and cut off the crusts. Use a cerated knife and gently cut off the edges with a delicate back and forth cutting motion. Using the same cutting technique, cut the sandwich into 2 triangles. Do not press down and crush the soft bread!
5. Itadakimasu! Just like in Japan!
Note: Since you are at home and you shouldn’t waste food, you can enjoy the crusts as well. And if you don’t enjoy the crusts, try toasting it in an oven toaster to bring out the deliciously crispy texture of the edges.)
