Sandwiches are a staple in American cuisine. It starts with deli meats and goes as far as you can choose to take it. Here is a recipe for a classic: an Easy Chicken Salad Sandwich Recipe:

 

Keeping it Easy & Making the Most of Leftovers

Making the filling for a chicken salad sandwich is so easy – so long as you have leftover roast chicken or fried chicken.

You can easily buy these from the supermarket or as takeout from your preferred restaurants. Enjoy the hot chicken as a dinner and save a portion as leftovers for your sandwich filling for lunch tomorrow.
 

Easy Chicken Salad Sandwich Recipe

Makes about 1 to 2 sandwiches
Ingredients

  • 1/4 cold, cooked chicken (best with roast chicken or fried chicken leftovers)
  • 1 small onion, chopped
  • 1 medium tomato, chopped
  • 150 grams unsweetened plain yogurt
  • 1 Tablespoon Japanese mayonnaise
  • 1 teaspoon Tabasco
  • 1/2 teaspoon kosher salt
  • pinch of ground black pepper
  • sliced bread, such as sandwich bread or sliced sourdough loaf, preferably toasted
  • optional: romaine lettuce

 
Kitchen Tools

 
1. Cut the leftover cold chicken into bite sizes. Note that it’s important to use roast chicken or fried chicken so that there is already flavor infused into the meat, rather than boiled chicken or canned chicken.
 
2. Place chicken in a large mixing bowl. Add chopped onions, chopped tomatoes, yogurt, mayonnaise, tabasco, salt, and pepper.

3. Mix together with a large mixing spoon until the sauce and ingredients are evenly distributed.

4. Taste it you need to add more salt for flavor, more tabasco for that bright kick, or more yogurt or mayonnaise for extra creaminess.
 
5. Scoop the chicken salad onto a piece of toasted sliced bread. Either serve it as an open-faced sandwich or top it with another slice of bread.
